For the PetNat, the Weber family uses Pinot Blanc grapes that grow directly below the winery in Niedermenniger Herrenberg. These are harvested at the very beginning of the vintage to preserve maximum freshness. The grapes are then immediately pressed as whole bunches, spontaneously fermented, and then the still fermenting
