Anejo Cristalino – KOMOS Reife Bananen Cask number: 9534429Only perfectly ripe 100% Blue Weber Agaves are hand harvested from both the Highlands and Lowlands of the Tequila Valley in Jalisco, Mexico. The pias are roasted in traditional stone ovens in Tequila, Mexico. The agua miel (sweet water) is naturally fermented and distilled in copper pot stills. It is aged for at least 1 year in French oak white wine barrels, not bourbon barrels. The Aejo is then dripped through a charcoal column to remove impurities.
