It's made from organic Pinot Noir and Pinot Gris grapes that were harvested by hand, before undergoing a 14 day whole bunch maceration, then fermentation with indigenous yeast in stainless steel. Bottled with no filtration or fining and just a tiny amount of sulphur. It's light and fresh, but with concentrated candied cherry
