Made from Xinomavro, a grape variety that is one of Greeces most important red varieties, this is pale in colour, yet high in tannins, like wine made from Nebbiolo. These grapes come from 15 25 year old vines planted on schist and limestone clay soils in Naoussa, undergoing fermentation in temperature controlled stainless steel tanks, with 25% whole bunch, before being bottled unoaked.
